We just love how diversified Indian cuisine is. We adore the diversity of Indian cuisine. It is extensive and rich and never ceases to amaze with its uniqueness and creativity. One of the most intriguing elements of this cuisine is the mystery it carries within. For example, a simple bundle of vegetables can reveal a plethora of regional and sub-regional recipes that are both light and soulful, yet packed with flavour. Recently, Shubham Bhatnagar, the editor of NDTV Food, tried one such Konkani recipe during his stay in Maharashtra, and we decided to share it with you. It’s a comforting bowl of Tambdi Bhaji.

Tambdi means ‘Red’ in Marathi, and ‘Bhaji’ means vegetable. Tambdi Bhaji is a simple vegetarian dish made with a fiery blend of any red-coloured vegetable, local spices and a kick of chilli. This particular Tambdi Bhaji comes from the coastal haven of Sindhudurg, Maharashtra, and is widely consumed in the Konkan region and beyond. Tambi bhaji is simple, easy to make, and tastes best when paired with hot rice and dal/sabzi.
This Konkani delicacy is also popular for its rich nutrient profile. The hero ingredient – red spinach – is high in fibre, antioxidants, and flavonoids and has a low glycemic index (GI). These factors make the veggie (which is red in colour) a great ingredient to add to your daily diet to maintain healthy digestion, blood sugar levels, and good gut health.

Here’s a step-by-step recipe for Konkani Tambdi Bhaji:
Step 1. Clean and wash a bunch of red spinach. Chop and keep them aside.
Step 2. Chop onion and garlic, and slit the green chillies.
Step 3. Heat oil in a pan and add onion, garlic, chillies, and fry until the raw smell evaporates.
Step 4. Add the red spinach, mix and sprinkle some salt. Do not add excess salt in one go.
Step 5. Toss on low flame for a while and close the lid. Cook it until the spinach turns soft and semi-dry.
Step 6. When done, add a handful of freshly grated coconut and mix.
Step 7. Switch off the heat and serve hot.
